Huevos Rancheros165 calories per serving serves 8 Ingredients- 1 tsp ground cumin
- 15 oz can pinto beans, rinsed and drained
- 4 thinly sliced scallions
- 1 small sliced red bell pepper
- 1/2 cup chicken stock
- 2 cloves minced garlic
- 4 egg
- 1 cup sliced avocado
- 4 tbs fat-free plain greek yogurt
- 4 tbs red salsa
- 8 toasted corn tortillas (6")
Instructions- cook beans, cumin, scallions, pepper, water, garlic
- bring to boil, then simmer 8 minutes
- smash until just lumpy
- make 4 dents in bean mixture using spoon
- break 1 egg into each dent
- cover, cook 8 minutes
- serve on tortilla with avocado
It takes more calories, but you can also choose to use 8 eggs, so that there's one egg per serving, or divide into only 4 servings.
